Patty on Perheleipuri Salonen’s multigrain bread

A patty prepared for Jussi’s sliced multigrain bread of Perheleipuri Salonen is a traditional and domestic version of a burger. Sunborn Catering’s chef Kristian Karnell serves the patty with caramelized onion, pickled cucumber and sour cream.

1 onion
2 garlic cloves
400 g mincemeat
2 dl cream
1 egg
0.4 dl breadcrumbs
1 tsp salt
4 rotations of black pepper from the mill

1 tbsp butter
1 tbsp rapeseed oil

Caramelized onion

2 big onions
2 tbsp butter
2 tbsp sugar

2 slices of Jussi’s multigrain bread of Salonen
2 pickled cucumbers
4 tbsp whipped sour cream

Mince the onion and the garlic. Mix the mincemeat, the onion and the garlic in a bowl, add the cream, the egg and the breadcrumbs. Finally season with salt and ground pepper and let the mixture rest for abt. 15 minutes. Form the mixture into patties, fry them in butter-oil mixture till nicely brown on both sides, fry the patties over medium heat until done.

Slice the onions into thin rings and fry them in butter till nicely brown. Add sugar and fry still for a moment. Season finally with salt.

Spread some oil on the slices of Jussi’s multigrain bread of Salonen and roast them in the oven at 180 degrees for abt. 6 minutes. Put a patty and caramelized onion on the warm slice of bread and complete the portion with pickled cucumber and whipped sour cream. If you like, scatter pinch salt and fresh black pepper from the mill on the finished portion. Garnish it with fresh herbs.
